The Transit Kitchen at the barracks has to provide hundreds of meals, sometimes at short notice as Army personnel ship in and out of the base.

The old equipment was tired and the ventilated ceiling had health and safety issues.

We designed a new layout for the main cooking equipment including a Lincat Cookline with solid top ranges, griddle, fryers and salamander plus a second cookline with Electrolux Duomat Bratt Pans.

The main rack dishwasher was replaced with a new Winterhalter machine and the Utensil Washer was replaced with a new Electrolux item. Odds and ends included water boilers, mixer, peeler, toasters, refrigeration and fabrication.

The old ventilated ceiling was removed and we installed two main canopies and a smaller canopy over the utensil washer, fire suppression was included in the main canopies.

To assist with site logistics we hired two containers and used them for temporary storage of the equipment and canopies on site.

The best part though was the strangest induction that we have ever been to! Not so much falling, tripping or wearing the correct PPE, more watch out for terrorists, missiles and savage guard dogs!
